Roasted Sweetheart Cabbage

Deliciously sweet, crisp and pointy Sweetheart cabbage (also known as Pointed or Hispi) is rich in Vitamin C and good pre-biotics, which keep the gut and immune system healthy.
Cabbages are full of phytochemicals and should be a part of your daily diet. Not only does this help build a healthy immune system to fight off viruses, it also helps your body recover from illness more quickly, so eat your cabbage!
Ingredients
- 1 Sweetheart (Pointed) cabbage, quartered
- ½ tsp Ground Coriander
- ½ tsp Ground Cumin
- 1 tsp Chilli Flakes
- 1 tbsp Oil
- 100g Feta Cheese, small chunks (optional)
- 1 tbsp Natural yoghurt (optional)
- Salt and Pepper
Instructions
- Preheat oven to 200c
- Place cabbage quarters in a colander and rinse thoroughly
- Arrange the cabbage in a tray and drizzle over the oil to coat as much of the cabbage as possible
- Spring over the spices and season to taste with salt and pepper
- Put in the oven and roast for 20-25 minutes until the cabbage is tender to eat
- Serve on its own or sprinkled with small chunks of Feta Cheese or a dollop of natural yoghurt
- Enjoy!
