Sesame & Ginger Asian Slaw

Ingredients:
½ white cabbage - finely shredded
1 carrot - coarsely grated
1 red pepper - finely sliced
15g fresh coriander - finely chopped
3 spring onions - finely sliced
75g radish - sliced
40g edamame beans - blanched & cooled
1 red chilli - diced
5g black sesame seeds
Dressing Ingredients :
1 tbsp rice wine vinegar
Juice of 1 Lime
1 ½ tbsp sesame oil
½ garlic clove
10g ginger puree
1 tbsp mirin
Method:
- Add prepped veg and edamame beans to a large mixing bowl and then add fresh chilli, coriander and sesame seeds.
- In a separate small bowl mix dressing ingredients.
- Add the dressing to the salad and mix thoroughly.
- Serve.
