Cauliflower Tacos with Pickled Red Cabbage and Avocado Crema

Makes 4 Tacos


Ingredients:   
 
                                                       

1 Cauliflower - approx 500g / broken into florets

1 ½ tbsp chipotle paste

1 tbsp water

1 tsp hot chilli powder

1 tsp smoked paprika

Juice of half a lime

Pinch salt & black pepper


¼ Red cabbage - approx 150g, finely sliced

Juice of 1 lime

10g chopped coriander
Pinch salt
 

1 medium avocado - mashed

40g soured cream

Pinch Salt & pepper

Juice of ½ lime

½ Fresh red chilli - slices
 

4 Corn Wraps 


 

Method:

  1. Preheat ovn to 200c
  2. Add cauli?ower to baking tray with chipotle paste / olive oil / spices / seasoning / water and mix thoroughly to coat. Put in oven for 20 mins until soft & charred.
  3. Red cabbage slaw - Add sliced red cabbage, lime juice, coriander, salt & pepper to bowl & mix thorougly.
  4. Avocado crema - blitz 1 medium avocado with 40g soured cream, juice of ½ lime, salt & pepper in food processor or mash together with a fork in bowl. 
  5. Build tacos - ?ame corn wraps for a few seconds. Add cauli?ower, slaw  and avocado crema to each taco and ?nish with squeeze of lime & fresh red chillies
  6. Enjoy!
