Parmesan-Roasted Cauliflower

Ingredients
- 1 Cauliflower, cut into florets
- 1 medium onion, sliced
- 4 Sprigs of Thyme
- 4 Garlic Cloves, Unpeeled
- 3 tbsp Olive Oil
- Salt & Freshly Ground Black Pepper
- 128g Grated Parmesan
Method
- Preheat Oven to 220°C
- In a bowl mix together the Onion, Thyme, Garlic, Oil and seasoning.
- Add the Cauliflower florets to the bowl and toss to ensure even coverage.
- Place Florets on a baking tray and place in the oven to roast for around 35-40mins or until almost tender. Keep tossing the cauliflower occasionally during cooking.
- Remove from oven and sprinkle with Parmesan, toss to combine, and roast for another 10-15 mins or until cauliflower is tender.
- Serve and enjoy!
