Charred Leeks with Romesco Sauce

Ingredients:
 

4 Leeks - sliced in half lengthways

30g pine nuts

1 garlic clove - small - puree

25g Sun dried tomatoes

1 tbsp red wine vinegar

110g Roasted Red peppers - drained/ jar

½ tsp Cayenne or hot chilli powder

1 tbsp Extra Virgin Olive Oil

Pinch salt & black pepper

Fresh basil leaves

Pinch of Chilli Flakes
 

 

Method:

 

  1. Heat 1 tbsp olive oil in hot frying pan or griddle.

  2. Char leeks in oven for a 10 minutes until tender. Alternatively can be cooked in 200c oven for 10 mins or until charred and tender. 

  3. To make romesco add all remaining ingredients (except basil leaves) to a food processor and blend until smooth.

  4. To serve add romesco sauce to base of plate, top with charred leeks.

  5. Garnish with fresh basil leaves and extra chilli ?akes.
