Easter is here and Spring is in the air

Have you ever wondered why Easter’s date changes every year?
Believe it or not, it’s linked to the Lunar calendar and the moon's position. Easter falls on the first Sunday after the full moon that takes place on or after March 21st, which is said to signal the start of Spring.


Chocolate Eggs may symbolise new life and the brightness of Spring however we believe the sight of fields blanketed by covers protecting the seedlings busily growing underneath are too.


Following an incredibly wet Winter, we’re finally making a start on planting this year's Brassicas, Leeks and Potatoes – when the weather allows!
 

 

Our field teams are working hard planting new season crops however our harvesting teams are also busy harvesting Leeks, Purple Sprouting Broccoli, Spring Greens and Cauliflower, all of which are eggs-ceptional accompaniments to the traditional Easter Sunday Roast Dinner.


On average, children in the UK get 8.8 chocolate eggs every Easter, so maybe balance out the sweet treats with some nutritious Lincolnshire-grown produce?


You often see Leeks used in soups, casseroles and stews but roasting them in the oven really enhances their flavour, giving them a chance to shine.
Simply remove the flag (green top) and root then peel off the outer layer, slice in half lengthways and wash thoroughly.
In a bowl mix together 2tbsps olive oil, 1tbsp red wine vinegar and 1 tsp chopped thyme and 2 cloves garlic.
Place in a ovenproof dish in one layer, cut side up and drizzle with the dressing. Bake for around 15-20 minutes in a preheated oven set to 200c.


Or why not top steamed leeks with a cheese sauce and top with a mix of grated cheese and breadcrumbs and bake for around 20 mins until bubbling and crispy on top. If leeks aren’t your cup of tea, then of course you can’t go wrong with a cauliflower cheese!

Roast vibrant purple sprouting broccoli for around 10-20 mins in the oven, until it turns golden brown, the edges start to slightly crisp and it turns tender. Top with a homemade lemon and garlic butter and season well.


All the above recipes will pair well with your choice of roasted meats, especially roast lamb, for your Easter Sunday lunch.
