Brussels Sprouts, Chestnut and Sausage Meat Stuffing Balls

Ingredients –
200g sprouts shredded
½ onion diced
1 dessert spoon olive oil
2 cloves of garlic finely sliced
250 g sausage meat
125g cooked chestnuts crumbled
50g panko breadcrumbs
5g/2 dessert spoons chopped sage
5g/2 dessert spoons chopped parsley
2g/1 dessert spoon chopped thyme
Method –
1.Preheat oven to 200°c
2.Sweat off the shredded sprouts, onion and garlic in a pan with the olive oil for about 2-3 minutes or until softened slightly. Allow to cool slightly
3.Place all the remaining ingredients in a bowl, add the cooled sprout mixture and combine with the other ingredients so that it is mixed thoroughly and will stay together when shaped into a ball.
4.Shape into 8-10 clementine-sized balls and place on a greased baking sheet and cook @ 200? for 15-20 minutes until golden and cooked through.
