Sprout, Pancetta and Gruyere Gratin

Ingredients –

500g brussels sprouts , peeled and halved lengthways

2 dessert spoons of olive oil

Sea salt

Black pepper

1 tsp thyme leaves


100g grated Gruyere cheese

200g Pancetta or dry cured streaky bacon diced

350ml Double cream

100ml Prosecco or White wine

½ Onion diced finely

2 cloves Garlic sliced finely


Method –

1.Preheat the oven at 200°c.

2.Toss the sprout halves along with half the oil, salt and pepper and roast for 10 minutes.

3.In a large frying pan, fry off the onions, garlic and pancetta for a couple of minutes. Then add in the prosecco, thyme and cream.

4.Tip in the roasted brussels sprout halves, combine evenly and then pour into an ovenproof dish.

5.Top with grated gruyere cheese and bake in a preheated oven for 15 minutes.
