Peanut, Chilli and Brussels Sprouts Stir-Fry

Ingredients –
- 2 tbsp dark Soy Sauce
- 3 tbsp Peanut Butter (crunchy is best but smooth would work fine)
- Juice of 1 Lime
- Sesame Oil for stir-frying
- 1 Brown Onion, finely sliced
- 2 Garlic cloves, crushed
- 2 tsp grated fresh Ginger
- 300g Brussels Sprouts (halved if large)
- 300g Straight to Wok Udon Noodles or Pad Thai Rice Noodles
- 2 tsp Crispy Chilli in Oil
- 4 tbsp water
Method –
- Mix the peanut butter, soy sauce and lime juice with 3 tbsp water in a bowl. Set aside for later.
- Heat the sesame oil in a wok or high-sided frying pan. Add the onion, then fry for a few minutes until soft
- Add the garlic, ginger and crispy chilli to the pan and fry for another 30 seconds.
- Next add in the Brussels Sprouts and stir-fry for 4-5 minutes or until the Sprouts become tender and slightly charred
Add a splash of water to stop things from sticking during cooking
- Then add the cooked noodles, tossing until warmed
- Pour over the peanut sauce, tossing until coated well
- Serve in bowls, top with coriander or chopped peanuts if you wish
