Parmesan-Roasted Cauliflower

Ingredients

  • 1 Cauliflower, cut into florets
  • 1 medium onion, sliced
  • 4 Sprigs of Thyme
  • 4 Garlic Cloves, Unpeeled
  • 3 tbsp Olive Oil
  • Salt & Freshly Ground Black Pepper
  • 128g Grated Parmesan

 

 

Method

 

  1. Preheat Oven to 220°C
  2. In a bowl mix together the Onion, Thyme, Garlic, Oil and seasoning.
  3. Add the Cauliflower florets to the bowl and toss to ensure even coverage.
  4. Place Florets on a baking tray and place in the oven to roast for around 35-40mins or until almost tender. Keep tossing the cauliflower occasionally during cooking.
  5. Remove from oven and sprinkle with Parmesan, toss to combine, and roast for another 10-15 mins or until cauliflower is tender.
  6. Serve and enjoy!
